1 c. buttermilk
2 eggs
1/4 c. butter, melted, and cooled
1 c. quick-cooking oats
1-1/3 c. flour
1/2 c. packed brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 (optional) raisins
In large bowl, whisk together buttermilk, eggs and butter; stir in oats. Set aside. Sift together flour, sugar, baking powder and soda, cinnamon, nutmeg and salt; stir into oats mixture along with raisins just until moistened.
Spoon batter into greased muffin cups two-thirds full; bake in 400°F oven for about 20 minutes or until tops are firm to touch.
